Making Quality Pie Shells Fast Using a Tortilla Press - Increasing Pie Production with a Few Simple Tricks!!!

The humble tortilla press is far more useful than it appears. When you're making pies or tarts this brilliant tool can cut the time it takes to make the pastry shells dramatically. Use this alongside the shell forming technique I first demonstrated in our course on pie making, and you'll cut the pastry forming time by 80%.
Ingredients
Using 5 Inch #680 Pie Foils
  • 130g of pastry for each pie base
  • 100g of pastry for each pie lid
Instructions
  1. Starting with pot pies, line the entire press with cling-wrap or plastic film. These inexpensive bread bags work very well.
  2. Roll the bottom pastry portion into a ball and place in the center of the bottom plate of the press. Flatten it out slightly and fold the plastic over this. Close the press and use the lever to press the lid flat. Repeat this with all of the pie bottoms.
  3. Use your rolling pin to roll these out further to a diameter of 7 inches.
  4. Invert a 5 inch #680 pie foil on your work surface. Open one side of the plastic on one of the pastries. Drop the pastry over the pie foil. Even the pastry around the edges and drop another foil over this. Press this down firmly around the edges.
  5. Pick the whole lot up and flip it over. Press the inner foil down firmly around the edges of the base, then the remove the foil and plastic. And there it is.... a perfectly formed, perfectly even pie base. Repeat this with the remaining bases.
  6. Use the same pressing procedure to press out the lids. For this demonstration I am not filling the pie. Drop the lid onto the pie and press the edges down gently to seal. Use a fork to crimp the edges, then trim away the excess pastry with a sharp blade. Punch 2 vents in the lid and you're ready to go.
  7. To make tart shells is just as simple. Drop the pressed and rolled tart pastry over an inverted pie foil. Drop another shell over this and press this down firmly around the edges.
  8. Lift the whole lot up and flip it over. Press the inside edges of the inner foil down firmly, then remove the inner foil and plastic. Trim away the excess pastry with a sharp blade.
  9. Use a fork to dock the pastry. This prevents the pastry from bubbling away from the foil in the next step.
  10. Press a square of foil into each pastry. Fill the pastries with rice, beans or baking beads and bake the tart shells in a preheated oven at 200c or 400f for 10 minutes. Remove the shells from the oven, carefully remove the rice and foil squares, then return these to the oven for a further 5 minutes.
  11. Your tart shells are now ready for filling and processing.
  12. Not only does this process save you tons of time, but also keeps the pastry much cooler, and inhibits shrinkage, resulting in a much better quality pie or tart.

Stuffed Barbecue Grilled Buns - Stuffed Roostekoek - Roostekoek Stuffed with Garlic Butter & Herbs.

Just a few episodes back we made traditional South African roostekoek, or in English, barbecue grilled buns. Following that, I had a number of requests to do the same buns stuffed with fillings.
Ingredients
  • 2 Batches of Roostekoek dough
  • 160g Butter
  • 3 Large cloves garlic, finely chopped
  • 2.5ml Salt
  • 2.5ml Dried Italian herb mix
  • Fresh cracked black pepper
Instructions
  1. To make the filling, mush the butter, garlic, salt, herbs and cracked black pepper until totally combined.
  2. Lay out a sheet of cling wrap and drop the butter mixture into the center of the plastic.
  3. Fold the plastic over the butter and roll it out to a thickness of 3mm.
  4. Transfer this to your freezer for at least an hour to solidify.
  5. Turn the roostekoek dough out onto a lightly floured work surface and gently flatten it out to a roughly rectangular shape.
  6. Use your rolling pin to roll this down to a thickness of 10mm or just less then half an inch.
  7. Remove the solid sheet of garlic butter from the freezer and cut it into squares.
  8. Mark out the center point on the dough. Space squares of frozen butter over on half of the dough at even intervals.
  9. Fold the blank dough over this and press it down lightly, then run over the sheet lightly with your rolling pin.
  10. This will allow you to see where the squares of butter are located. Cut the dough between each row of butter squares to give you 9 buns.
  11. Lightly flour a roasting pan and transfer the buns to the pan. Cover the pan with cling wrap and allow the buns to rise in a warm place for 30 minutes.
  12. Heat your barbecue to the lower side of medium heat and oil the grid. When you can hold your hand an inch from the grid for 10 seconds before burning, the temperature is right.
  13. Grill the buns for 6 minutes per side until well colored and slightly crisped on the outside.
  14. Remember that the grill is not the same temperature all over, and some of the buns may have to bake slightly longer.
  15. Remove the buns from the grill once done and serve immediately.

Traditional South African Roostekoek - Best Barbecue Buns Recipe - Bread Rolls on the Barbecue!!!

Roostekoek are the traditional barbecue buns served at South African barbecues, or braais. There is a trick to achieving light, well textured roostekoek, with a beautifully soft inside and slightly crispy outside.
Ingredients
  • 300g Strong white bread flour
  • 5ml Salt
  • 15ml Sugar
  • 10ml Yeast
  • 30ml Oil
  • 180ml Warm water
Instructions
  1. To start, pour the warm water into a jug. Add the yeast, sugar and oil and stir this all together. Put this aside in a warm place for 20 to 30 minutes until it is very frothy.
  2. In a large mixing bowl, combine the strong white bread flour and salt. Make a well in the center and pour in the frothy yeast mixture.
  3. Using a wooden paddle mix this until a dough comes together and comes away from the sides of the bowl.
  4. Turn the dough out onto a lightly floured work surface, sprinkle a little flour over the top, and proceed to knead the flour for 5 minutes until it is smooth and elastic.
  5. Place the dough back into the bowl, cover with cling-wrap and allow this to rise to double for 60 minutes in a warm place.
  6. Once again, turn the dough out onto a lightly floured work surface. Don't punch the dough down. You want keep as much air in the dough as possible.
  7. Lightly flour the top of the dough and gently flatten it out into a roughly rectangular shape. Use your roller to roll it to a thickness of 10mm or just less than a half inch.
  8. Use your dough scraper to cut this into 6 or 8 pieces. Place the pieces in a lightly floured pan. Cover the pan and allow these to rise again for 20 minutes in a warm place.
  9. Heat your barbecue to medium heat and oil the grid. You will know you have the correct temperature when you can hold you hand over the heat for 10 seconds before it becomes unbearable. If it hotter the buns will burn before the inside cooks, any cooler and they will dry out and become dense and heavy.
  10. Grill the buns for 5 to 6 minutes per side. Bare in mind that not all parts of the grill are the same temperature, and as a result some of the buns will grill quicker than others.
  11. Remove the buns from the grill and serve hot with a large dose of butter and the fillings of your choice.

These super thin, crispy pizza bases are really easy to make. More like crispy matzah bread, this dough can be used to make mini and regular sized pizzas. There is no rising time, and the added bonus is that the dough can be rolled through a pasta roller.
Ingredients
  • 500g Self-raising flour
  • 250ml Milk
  • 2.5ml Salt
Instructions
  1. Place the self-raising flour, salt and milk in your food processor. Put the lid on and start mixing at maximum speed.
  2. Mix the dough for about 2 minutes, scrape the bowl down, and continue mixing for another 2 to 3 minutes. The dough will be crumbly, but will hold together well when compressed.
  3. Turn the dough out onto a lightly floured work surface and compress it into a ball. If you're not going to use the dough immediately wrap it in cling-wrap and store it in your refrigerator.
  4. Divide the dough into 4 pieces and proceed to roll each piece out to a thickness of 3 mm. This can be done by hand or machine.
  5. I am making mini pizzas for a wine tasting, but you can cut your bases to any size you require. Dock the bases.... this is fancy term for pricking holes in the dough. The docking prevents the bases from blowing up into large pillows while baking.
  6. Top the bases with toppings of your choice and bake them in a preheated oven at 250c or 480f for 10 to 12 minutes.
  7. Remove the pizzas from the oven and serve immediately.
  8. This recipe will make 4 regular bases, or up to 120 mini pizzetti.

This episode is a short product review. The products I review are generally products that I use on a dailly basis and have tried and tested thoroughly. Today’s product is the Joseph and Joseph thicknessing rolling pin.

I have been using this one for over a year now, and as you can see, it still looks brand new. These are available in stainless steel and wooden versions, however I opted for the stainless as it can go in my dishwasher.

The rolling surface is a generous 350mm wide and is laser etched with width measurements in centimeters and inches, and this proves to be quite useful.

At each end of the cylinder, four different sized discs are attached to the tube with a large heavily threaded screw.

These discs allow you to select the desired thickness of the pastry by raising the rolling surface the desired amount from the work surface. The disc sizes are 2mm, 4mm, 6mm and 10mm. The discs also have inch measurements on the reverse side.

As previously mentioned these discs simply attach via a heavy gauge screw.

This is a superbly made product, and if you’re looking for a rolling pin than will almost certainly outlive your entire family tree, this is it.

These donuts are light and crispy, made from a super-quick dough using baking powder and egg as the raising agent.
Ingredients
  • 1 Cup sugar
  • 2 Eggs
  • 30g Butter, melted
  • 1 Cup milk
  • 15ml Vanilla extract
  • 600g All-purpose flour
  • 45ml Baking powder
  • 1 Tbs ground nutmeg
  • 7.5ml Salt
Instructions
  1. The ingredients are divided into 3 sets and should be measured and ready before you start. The first set is the sugar and eggs. The second set, the melted butter, vanilla extract and milk. The third set, the all-purpose flour, baking powder, nutmeg and salt.
  2. Place the eggs and sugar in the bowl of your mixer and beat them together for 2 to 3 minutes until light and creamy.
  3. Pour in the melted butter, milk and vanilla. Allow this to mix until totally combined.
  4. Replace the beaters with dough hooks and pour the flour mixture into the bowl. Mix the dough until everything is well combined. The dough will be soft and sticky.
  5. Turn the dough out onto a well floured work surface and sprinkle more flour over the top of the dough as well.
  6. Start compressing and folding the dough over and over, sprinkling with extra flour every time it becomes too sticky.
  7. Continue to knead the dough lightly for about 3 minutes until it is smooth and elastic.
  8. Roll the dough out to a thickness of 10mm or just less than a half inch. If you don't have a donut cutter use a tumbler or a food mold to cut out circles. Pull away the off-cuts, re-roll them and cut out more circles.
  9. To make the holes, poke skewer or chopstick into the center of the circle. Start swivelling the chopstick around until the hole has stretched to the desired size.
  10. Heat a half-filled pan of oil to 180c or 350f and carefully drop the donuts into the oil. Fry the donuts for 4 minutes, turning every minute to ensure even coloring.
  11. Remove the donuts from the oil, drain on kitchen paper and proceed with your preferred decorations, whether icing sugar, caster sugar or glaze.

The Mega Toasted Sandwich!!! Super-Stacker Double-Thick Toasted Sandwich - Grilled Chicken Mayonnaise. Today's episode presents simply the best way to make a toasted sandwich. My recipe is using chicken mayo, but you can use tuna mayo or any saucy type filling.
Ingredients
  • 1 Chicken breast
  • ½ Onion
  • 30g Butter for frying
  • 75g Mayonnaise
  • Butter for spreading
  • 6 Slices bread from a square loaf
  • Salt and pepper
Instructions
  1. Cut away the fillet on the inside of the breast and put this aside.
  2. Fold the breast in cling-wrap and tap it down using your meat mallet to a thickness of 3mm or ⅛th of an inch.
  3. To continue, dice half of a medium size onion.
  4. Use your peeler to cut 16 very thin slices of mozzarella cheese.
  5. Unwrap the chicken and season it liberally on both sides with salt and cracked black pepper. This includes the fillet that you cut away.
  6. Heat a pan over medium high heat and add 30g of butter. Fry the onion for 5 minutes until it just starts to brown on the edges. Scoop the onion from the pan leaving as much butter behind as possible.
  7. Add the chicken to the pan and fry this for 3 minutes, turning every 30 seconds.
  8. Remove the chicken from the pan and transfer it to a chopping board. Cut the chicken into strips, then into blocks, then march chop until reasonably fine.
  9. Add the chicken to the onion along with the mayonnaise and mix this thoroughly to combine.
  10. Take 6 slices from a square loaf of bread. Cut the centers from 2 of the slices.
  11. Butter one side of the remaining 4 slices of bread and put them in pairs with the butter facing inward.
  12. Working with the first pair, position 4 strips of cheese along the edges of the bread. This will melt and glue the sandwich closed.
  13. Place one of the hollow slices on top of this. Fill the hollow with half of the chicken filling. Don't fill it past the level of the crust.
  14. Place another 4 slices of cheese around the edges. Lift the filled part of the sandwich and place the underneath slice on top of the sandwich. Both outer surfaces of the sandwich are buttered surfaces.
  15. Repeat this with the second sandwich.
  16. Heat another pan over medium heat and grill the sandwiches until crispy golden on both sides. Use your lifters to square up the edges every time you turn the sandwiches.
  17. I urge you not to try this in a sandwich toasted unless you have a toaster like a Breville 800 with self leveling and thickness settings. A regular toaster will simply crush the sandwich.
  18. To cut the sandwich, use the tip of your knife to get a clean cut, and to avoid crushing the sandwich.
  19. Serve these the amazing toasties to platters and enjoy.

Soft Cheese & Garlic Dinner Rolls. These soft rolls are amazing. Depending on what size you decide to make them, you can use them as dinner rolls, or if larger, as burger buns. Superbly soft and tasty, and super quick to make, these rolls are a winner every time.
Ingredients
  • 30ml Instant dried yeast
  • 280ml Warm water
  • 60ml Sugar
  • 80ml Oil
  • 1 Egg, lightly beaten
  • 5ml Salt
  • 500g All-purpose flour
  • 30ml Garlic, finely chopped
  • 100g Parmesan, finely shredded
Instructions
  1. Mix the instant yeast and sugar together in a large mixing bowl. Pour in the warm water and mix this until the yeast has totally dissolved.
  2. Pour in the oil and mix this in briefly, then set the bowl aside for ten minutes until the yeast if frothy.
  3. Add the salt, egg, flour, garlic and finely shredded cheese.
  4. Using a wooden paddle, stir the mixture until a dough comes together, and the mixture comes away from the side of the bowl.
  5. Turn the sticky dough out onto a well floured work surface. Sprinkle flour over the top of the dough as well and start to knead.
  6. Knead the dough for 5 minutes sprinkling a little more flour every time it becomes too sticky. Knead until the dough is smooth and elastic.
  7. Roll the dough into a sausage and divide it into 4 pieces. Roll each of these out and divide in half to get 8 pieces in total.
  8. Roll each piece out into a sausage then turn the piece at 90 degrees and roll it up like a snail shell. Transfer the rolls to an oiled baking sheet and stand them up on their widest edge.
  9. Press them down gently to flatten them slightly if they don't want to stand up.
  10. Brush the rolls with egg wash and give them a good grind of cracked black pepper.
  11. Bake the rolls in a preheated oven att 220c or 425f for 8 to 12 minutes until golden.
  12. Remove the rolls from the oven and transfer them to a rack to cool for at least 30 minutes before serving.

Indian Naan Bread has become increasingly popular in the West. Traditionally baked in a Tandoori oven, this recipe shows you how to make your Naan Bread in a pan.
Ingredients
  • 5ml Instant yeast
  • 5ml Honey
  • 125ml Warm water
  • 45g Melted ghee (clarified butter)
  • 60ml Plain yogurt
  • Cumin seeds
  • 250g Strong white bread flour
  • 2.5ml Salt
Instructions
  1. Place the yeast in a jug and add the honey and the warm water. Stir this to combine and put it aside to activate for 5 minutes.
  2. In a large mixing bowl, combine the flour and salt. Add 15ml of the melted ghee to the yeast mixture along with the yogurt, and stir this until well combined.
  3. Pour the yeast mixture into the flour. Using a wooden paddle mix this until a dough comes together and it cones away from the sides of the bowl.
  4. Turn the dough out onto a lightly floured work surface and knead it for 5 minutes until smooth and elastic. Place the dough back in the bowl, cover the bowl with cling-wrap and allow the dough to rise in a warm place for 90 minutes.
  5. After 90 minutes, knock the dough back, knead it briefly and divide it into 6 equal portions.
  6. Roll the portions into balls and flatter them into discs of 15mm in thickness. Sprinkle the discs with cumin seeds and press these lightly into the surface.
  7. Heat a pan over medium high heat and grill the naan for 3 minutes per side until well risen and crispy browned.
  8. Remove the flat breads from the pan and serve as an accompaniment to your curry.

For the Dough
  • 300g All-purpose flour
  • 15ml Baking powder
  • 110g Caster sugar
  • 125ml Milk
  • 80ml Water
  • 60ml Oil
For the Hoisin Pork Filling
  • 250g Pork loin
  • 125g Streaky bacon
  • 10ml Garlic
  • 10ml Ginger
  • 1 Small carrot
  • 30ml Hoisin sauce
  • 15ml Oyster sauce
  • 15ml Cornflour
Instructions
  1. In a large mixing bowl, combine the flour, baking powder and caster sugar.
  2. In a jug, whisk the milk, water and oil together, then pour this into the mixing bowl.
  3. Using a wooden paddle, mix this until a smooth dough comes together. The dough will be soft and very sticky.
  4. Turn this out onto a well floured work surface and sprinkle more flour over the top of the dough. Start kneading, stretching and folding the dough, sprinkling more flour on every time it becomes sticky.
  5. When the dough smooth and is no longer sticky it is ready wrap in clingwrap. Place the dough in your refrigerator for 60 minutes.
  6. While the dough rests, place the pork, bacon, garlic, ginger, carrot, hoisin sauce, oyster sauce and cornflour in your food processor and zap this until it is finely chopped.
  7. Unwrap the dough and roll it into a long sausage. Divide the sausage into 4. Roll each of these into a sausage and divide these into 4, giving a total of 16 pieces.
  8. Working with one piece, flatten this into a disc on a lightly floured work surface. Then extend and thin the edges of the disc.
  9. Spoon 2 tablespoons of the filling into the center of the disc. Pull and stretch the edges of the disc up and over the filling to meet at the top. Twist the edges at the top to seal the bun.
  10. Continue with the rest of the buns. Transfer the buns to your bamboo steamer, each one on top of a small square of baking parchment. For 16 buns you will need to use both tiers of your steamer, or steam 2 batches.
  11. Remove the grill racks from your barbecue and place a cooling rack across the flame tamers of 2 of the burners. Light the 2 burners.
  12. Place your wok on top of the rack and half fill it with boiling kettle water.
  13. Once the water comes back to a boil, place the steamer on top of the wok. Allow this to steam for 30 minutes. This timing is slightly longer than usual because the temperature is slightly lower than that of a wok burner.
  14. Remove the steamer from the wok, transfer the buns to serving platters and brush them with roasted sesame oil before serving.

Todays episode is a little different from most in that we're doing a product review. This our first review on whats4chow, and the product is a donut batter dispenser. We are not getting paid or endorsing any product brand, as this particular tool is available from a number of different companies and can be found on ebay and amazon.
Ingredients
  • 2 Eggs
  • 2½ Cups All-purpose flour
  • 10ml Baking powder
  • 1 Cup sugar
  • 5ml Salt
  • 2.5ml Ground cinnamon
  • 2.5ml Ground cloves
  • 1.25ml Ground nutmeg
  • 5ml Vanilla extract
  • 15ml Melted butter
  • 250ml Milk
  • 5ml Ground cinnamon mixed with 60ml Caster sugar - for sprinkling
Instructions
  1. Beat the eggs and add the melted butter, vanilla extract and milk. Continue beating this thoroughly for 30 seconds.
  2. In a bowl, combine the flour, baking powder, sugar, salt, ground cloves and nutmeg. Mix this together and pour in the egg mixture. Beat this all until smooth.
  3. The batter should be allowed to rest for 30 minutes at this stage, although the manufacturers recipe does not state this.
  4. If you don't have a batter dispenser, drop spoonfuls of the batter into preheated oil at 185c or 360f and fry until golden.

This recipe is real lifesaver when you're catering for larger numbers. Chilli bites are dead simple to make, and although they can't be prepared long before the time, they are really quick.
Ingredients
Makes 40-50 Chilli Bites
  • 3 Cups Chickpea flour
  • ½ Tsp Bicarbonate of Soda
  • 1½ Cups Water
  • ½ Cup Chopped coriander
  • 3 Chillis, chopped
  • 1 Onion, finely chopped
  • ½ Cup Spring onion, finely chopped
  • 2 Tsp Toasted cumin seeds
  • 1 Tbs Chilli powder
  • 1 Tsp Garam masala
  • 1 Tsp Salt
Instructions
  1. Combine the chickpea flower and the bicarbonate of soda in a large mixing bowl. Add chopped coriander, chopped chillis, chopped spring onion, chopped onion, toasted cumin seeds, chilli powder, salt and garam masala. Mix these into the flour.
  2. Pour in the water and stir this to a thick batter. For the best result, allow the batter to stand for 15 minutes before proceeding with frying.
  3. Half fill a large pan with oil and heat this to 170c or 340f.
  4. Carefully drop slightly heaped tablespoons of the batter into the oil. Allow the chilli bites to fry for 4 minutes until golden, turning halfway through.
  5. Remove the puffs from the oil using a slotted spoon and drain them on kitchen paper. Continue with second batch of puffs until all them are fried.
  6. Transfer the bites to platters and serve hot or cold.
