Pizza Crackers! Yes, make amazing pizza flavored crackers at home!

Pizza crackers really do taste just like traditional pizza. Give it a try, you will not be disappointed!
Ingredients
  • 1.5 Cups All purpose flour
  • ¼ tsp Bicarbonate of soda
  • ¼ tsp Salt
  • ¼ tsp Cream of tartar
  • 10ml Yeast
  • 5ml Sugar
  • ½ Cup Finely shredded parmesan cheese
  • 35g Butter
  • 90ml Water
  • 30ml Olive oil
  • 1 Egg whisked with 30ml water
  • Italian herb mix (see below)
  • Himalayan rock salt
For the herb mix:
  • ▢2 tablespoons dried basil
  • ▢2 tablespoons dried oregano
  • ▢1 tablespoons dried rosemary
  • ▢2 tablespoons dried parsley
  • ▢1 tablespoon dried thyme
  • ▢1 teaspoon garlic powder
Instructions
  1. Sift 1 and a half cups of all purpose flour into a large mixing bowl. Add a quarter teaspoon salt, baking soda and cream of tartar.
  2. Follow this with 2 teaspoons of active dry yeast and a teaspoon of sugar. And last, but not least, a half cup of finely shredded Parmigiano Reggiano. Use a whisk to mix this all together thoroughly, then put this to one side.
  3. In a small saucepan, combine 35g of butter, 90ml water and 30ml olive oil. Heat the pan over medium heat only until the butter has melted. As soon as the butter has melted, remove from the heat.
  4. Pour the flour mixture into your food processor and start the machine on medium speed. Drizzle the melted butter mixture in through the tube. Mix until the dough comes together and there are no visible dry spots in the dough.
  5. Turn the dough out and compress it into a ball. Place the ball in a bowl and cover with clingwrap. Place the dough in your refrigerator to autolyse for at least 6 hours, preferably over night.
  6. The following day, remove the dough from your refrigerator and allow it to warm up for 15 minutes. Divide the dough in half and knead each half briefly until the dough is smooth. Roll to dough out to a thickness of 2mm.
  7. Use a roller cutter to cut the dough into small bite-size squares of around 30mm in size. Transfer the pastry squares to a large sheet pan lined with baking parchment.
  8. Whisk one egg with 30ml water and brush this onto the crackers liberally. Do this in batches to guarantee that the wash will still be wet when applying the herbs.
  9. Sprinkle the herbs liberally over the wet crackers and add a generous grind of Himalayan rock salt. Continue until all the crackers are flavored.
  10. Bake the crackers in a preheated oven at 210c or 410f for 12-14 minutes until golden. Remove from the oven and allow the crackers to cool completely in the pan before storing them in an airtight container.

Marinara sauce is an all-time favorite, and is used in dozens of Italian dishes including pizzas and chicken parmesan.
Ingredients
  • 800g Canned Italian tomatoes
  • 30ml Olive oil
  • 15ml Dried garlic flakes / powder (or 6 cloves fresh)
  • 2.5ml Crushed chili flakes
  • 7.5ml Salt
  • 15ml Dried Italian herb blend
  • 2.5ml Cracked black pepper
  • 5ml Sugar
Italian Herb Blend:
  • 45ml Dried savory
  • 45ml Dried basil
  • 45ml Dried marjoram
  • 45ml Dried oregano
  • 45ml Dried chives
  • 30ml Dried rosemary
  • 15ml Dried thyme
  • 15ml Dried sage
  • 15ml Dried parsley
Instructions
  1. To make your own marinara sauce place 800g of tinned italian tomatoes in juice in your food processor.
  2. You can also use fresh skinned Roma tomatoes.
  3. Add 30ml olive oil, 15ml dried garlic flakes, or 6 fresh cloves of garlic, 2.5ml chilli flakes, 7.5ml salt, 15ml Italian herb blend, 2.5ml cracked black pepper and 5ml sugar.
  4. If you cannot find Italian herb blend in your local supermarket, I have included the recipe below in the description.
  5. Pop the lid on the processor and zap this for about 30 seconds until reasonably fine.
  6. Transfer the mixture to a large pan and place this over medium heat.
  7. Bring the mixture to a boil, reduce the heat to low and allow the sauce to simmer and reduce for 20 to 30 minutes, stirring regularly.
  8. Once the sauce has no visible liquid, and your spatula leaves a well defined trail that holds its shape, the sauce is ready.
  9. Turn off the heat and transfer the sauce to a container or serving bowl.

Today we're going to make a magnificent potato pizza. The recipe is really simple, super-tasty and will have your guests lining up for more.
Ingredients
For the Pizza
  • 1 x Large ripe tomato
  • 10ml Crushed garlic
  • 15ml Dried Italian herb mix (below)
  • 8 x Rashers streaky bacon
  • 100g Mozzarella
  • 80g Cheddar or Monterey Jack
  • Salt & pepper to taste
  • 650g Potatoes
  • Oil for deep frying
For the Italian Herb Blend:
  • 45ml Dried savory
  • 45ml Dried basil
  • 45ml Dried marjoram
  • 45ml Dried oregano
  • 45ml Dried chives
  • 30ml Dried rosemary
  • 15ml Dried thyme
  • 15ml Dried sage
  • 15ml Dried parsley
Instructions
  1. To start, you need a quarter red, yellow and green pepper, a large ripe but firm tomato, 10ml crushed garlic, and 15ml Italian herb blend. If you can't find the herb blend in your supermarket, I have included the recipe below in the description.
  2. Chop the tomato and place it in a bowl, dice the peppers and add these.
  3. Add the garlic, and finally the dried herb blend. Stir this all together thoroughly and put it aside for the flavors to develop.
  4. Take eight rashers of well smoked streaky bacon and cut this into bits, across the grain.
  5. Cut 100g mozzarella cheese into squares, and slice 80g cheddar or Monterey Jack into 8 slices.
  6. Peel 650g potato and dice it into cubes of 10mm in size.
  7. Cut 2 squares of baking parchment, 300mm in size and place these on a baking sheet.
  8. Fry the diced potato in your deep fryer at 180c or 350f until crispy and golden.
  9. At this stage, turn on the grill, or upper element of your oven to maximum to preheat.
  10. Transfer half of the fried cubes to each of the parchment squares.
  11. Spread them into a circle keeping them slightly heaped up at the same time.
  12. Divide the tomato pepper mixture evenly between the two and spread these over the top of the potato.
  13. Pick up any stray bits and place these on top.
  14. Place the cheddar slices on top of the heap in a cross formation.
  15. Complete the cheese by scattering the mozzarella blocks evenly over each pizza.
  16. Top each pizza with half of the bacon bits.
  17. Give each pizza a generous grind of salt and pepper, and you're ready to bake.
  18. Transfer the baking sheet to the center of your oven to grill until the cheese is well melted, and the bacon is fully cooked and browning nicely on the edges.
  19. Remove the pizzas from the oven and serve piping hot with a tall beer to keep it company.

Calzone Recipe - How to Make Calzone from Start to Finish - Calzone Made with No Knead Pizza Dough

Some time ago we briefly touched on no-knead pizza dough. Today we will deal with this in more detail when we make a wonderful tasty and aromatic calzone from start to finish.
Ingredients
For the Dough (enough for 4 bases)
  • 500g All-purpose flour / double zero / cake flour
  • 1.25ml Dried yeast
  • 10ml Salt
  • 360ml Water
For the Calzone Filling (for 1 Calzone)
  • 4 Rashers streaky bacon, fried and chopped into bits
  • 60g Pizza salami
  • 100g Mozzarella cheese
  • 100g Mature cheddar cheese
  • Fresh basil
  • Cherry tomatoes,sliced
Instructions
  1. To make the dough, place 500g of all-purpose flour in a large tub. Add a quarter teaspoon of dried yeast and 2 teaspoons of salt and stir this in.
  2. Pour in the water and use your paddle to mix this together until the dough balls up and comes cleanly away from the sides of the bowl, with no more loose flour in the the mix.
  3. Put the lid on the bowl and allow this to stand at room temperature for 18 to 24 hours to develop.
  4. After this time the dough will have more than doubled in size and you will see bubbles in the surface of the dough.
  5. Use a scale to divide the dough into 4 equal portions.
  6. The dough will be quite sticky, and we need to work about 25g of additional flour into each potion.
  7. Flour the work with some of the flour, place portion of dough on the surface and scatter more flour over the top of the dough portion.
  8. Start working the flour into the dough by flattening it and folding it lightly until all or most of the flour is incorporated.
  9. Don't knead the dough as you would normally.... work gently so as not to overdevelop the gluten.
  10. Put this aside and continue with the remaining portions.
  11. To roll the pizza bases, lightly flour your work surface, place a portion of the dough on the flour and lightly flour the top of the dough as well.
  12. Us your rolling pin to roll this out into a circle of 12 inches or 30cm in diameter.
  13. Transfer this to a baking sheet.
  14. Cover one half of the dough with 100g of sliced mozzarella cheese.
  15. Top this with 60g of sliced pizza salami.
  16. Top this with 100g of lightly fried and chopped streaky bacon.
  17. Add the sliced cherry tomatoes and the fresh basil leaves.
  18. Last but not least, finish this off with 100g of grated mature cheddar cheese.
  19. Fold the blank side of the base up and over the filling and match up the edges of the base.
  20. Working one side to the other, secure the seal by folding and crimping the edges together.
  21. Use a paring knife or skewer to poke two steam holes in the top of the calzone.
  22. Zap this into a preheated oven at 250c or 480f until crispy and golden.... about 20 to 30 minutes, depending on the efficiency of your oven.
  23. And there we have it... a beautifully browned and crisped calzone filled with heavenly cheeses, bacon and salami.

How to Make Pizza Salami - Full Flavored and Aromatic Cooked Salami

Pizza salami, or cooked salami is the super-quick way to get amazing tasting cured salami without the long curing time. As it is not dry-aged like fermented salami, the moisture content is far higher than its counterpart, which makes it far more suitable as a pizza topping. This how to make it....
Ingredients
  • 1800g Pork Shoulder (boneless, skin off)
  • 450g Pork back fat
  • 50g Kosher salt (or Himalayan rock salt)
  • 6g Prague powder
  • 45g Golden syrup
  • 12g Fennel seeds
  • 12g Cracked black pepper
  • 6g Fresh crushed garlic
  • 125ml Dry red wine
Other
  • 6-7 Mini-salami casings
  • 6-7 Snap ties
Instructions
  1. Cut the pork shoulder into slices narrow enough to fit through the feeder tube of your meat grinder.
  2. Cut the pork back fat into strips as well.
  3. Place the 2 trays in your freezer for 60 minutes to get really cold, even partially frozen.
  4. While the meat chills, measure out the salt, Prague powder, fennel seeds, roughly cracked black pepper and garlic.
  5. Combine the golden syrup with the red wine and mix this until the syrup has totally dissolved.
  6. Fit the 8mm plate to your grinder and run the fat through the grinder.
  7. After this, run the pork through the grinder.
  8. Place the ground meat and fat into your stand mixer bowl.
  9. Unless you have had delays, the meat and fat should still be really cold. If it isn't, return it to the freezer until well chilled before continuing.
  10. Add all of the remaining ingredients to the mixer bowl as well.
  11. Place the bowl on your mixer with the dough hook fitted and mix this for 5 to 8 minutes on medium slow speed, until everything is well combined.
  12. Cover the bowl with cling-wrap and place it your refrigerator for 24 hours to cure.
  13. The following day, load the meat into the hopper of your sausage stuffer and fit the 40mm funnel to the stuffer.
  14. Slide a min-salami casing onto the funnel and start cranking. You need to keep a reasonable pressure on the casing to ensure that the meat is well compacted in the casing.
  15. As it comes to the end of the casing, stop cranking and remove the casing.
  16. Twist off the end of the casing and use a snap-tie or zip tie to secure the end. Using a small pair of pliers can be a big help in tightening the tie.
  17. Once all of the salamis are formed, use a carving fork to poke holes along one side of the casings.
  18. Transfer the salamis to a rack in a large roasting tin with the perforated sides facing downward.
  19. Cook these in a preheated oven set at 90c or 194f until the internal temperature reaches anywhere between 67c and 72c, or in farenheit, between 152 and 162f.
  20. This process will take between 3 and a half hours and 4 hours.
  21. Towards the end of this time, remove one of the salamis from the oven and check the internal temperature by inserting a probe thermometer from end down the middle.
  22. When the temperature is in the safe zone, remove the salamis from the oven. Allow them to cool completely, then transfer them to your refrigerator to set overnight. If you try to cut them before this, half of the salami with remain stuck to the casing.
  23. And there it is, beautifully rosy, rich and aromatic cooked salami.... ready to eat, and ready to treat.

Just the other day we made an amazing pizza dough that yields incredibly good results in a regular domestic oven. Today we're using the same dough for the bases while make what is arguably the most popular pizza in North America, the pepperoni pizza.
Ingredients
For the Sauce
  • 180ml Tomato puree'
  • 180ml Water
  • 5ml Onion flakes
  • 5ml Dried basil
  • 5ml Garlic granules
  • 5ml Dried oregano
  • 5ml Salt
  • 30ml Shredded Parmesan cheese
For the Topping
  • 300g Mozzarella cheese
  • 200g Pepperoni (or well aged salami)
  • ½ Batch special pizza dough each rolled to 30cm / 12 inches
Instructions
For the Sauce
  1. Measure out the onion flakes, dried basil, garlic granules, dried oregano and salt.
  2. Measure out the tomato puree and water, and finely shred the Parmesan cheese.
  3. Place everything except the Parmesan in a small saucepan.
  4. Place the pan over medium heat and bring it to a boil, stirring regularly.
  5. When the pot comes to a boil, reduce the heat to a simmer and allow this to continue for 30 minutes until thickened.
  6. Turn off the gas or remove the pot from the heat and stir in the shredded Parmesan.
For the Rest
  1. Pepperoni and salami are from the same family, with pepperoni being slightly more spicy. For this reason, if you cannot find pepperoni, you can substitute a good quality, well aged salami for excellent results.
  2. Slice the meat thinly using your slicer. This can also be done by hand, although it will take a bit longer.
  3. Cut the mozzarella cheese into thick slices. If your fortunate enough to find hand-crafted mozzarella, you can simply rip apart by hand.
  4. Scatter a little corn meal over your baking sheet and place one of the bases on the sheet.
  5. Pour half of the tomato sauce onto the base and spread it around, leaving about a half inch open around the edge.
  6. Scatter half of the mozzarella cheese over the base.
  7. Follow this with the sliced pepperoni to cover the entire surface of the pizza, then continue with second base.
  8. Bake the pizzas in a preheated oven at 250c or 480f for 15 minutes. The edges will be beautifully golden and base will nicely charred and crisp underneath.
  9. Serve immediately.

In today's episode we're going to look at an amazing pizza dough. The industry rule regarding pizza is you need supper high temperatures to bake and achieve the beautifully charred base and well browned rim. The problem is that almost no domestic home has an oven that can reach 350c or 662f. This dough will bake superbly at regular domestic oven maximum temperature of 250c or 482f. You will get a beautifully crisp, charred base and lovely coloring on the edges.
Ingredients
  • 500g Double zero or All Purpose flour
  • 20g Brewers yeast
  • 60ml Oil
  • 5ml Salt
  • 250ml Warm water
  • 1.25ml Sugar
Instructions
  1. Dissolve the sugar in the warm water.
  2. Pour the granulated brewer's yeast and stir this briefly to dissolve. Allow this to stand and activate for 10 minutes.
  3. Brewer's yeast is available in most food stores in the baking department alongside the baking yeast.
  4. After 10 minutes you will see a mass of froth on top the yeast.
  5. Pour in the oil and stir to combine.
  6. In your stand mixer bowl, add the flour and the salt. Try to use double zero or all purpose flour. You will get a better texture from these.
  7. Place the bowl on your mixer and pour the wet ingredients into the flour.
  8. Fit the dough hook and knead the mixture on medium low speed for 5 to 6 minutes.
  9. After this time you will have a beautifully soft dough that is not sticky at all.
  10. Remove the bowl from the machine, cover with cling-wrap and let the dough rise for 60 to 90 minutes until more than doubled in size.
  11. After this rising time, turn the dough out onto a lightly floured work surface and knead it briefly to knock it down.
  12. Weigh the dough and divide it into 4 equal pieces. Each piece will make a 30cm or 12 inch base.
  13. Working with 1 piece at a time work the dough into a disc shape, then roll it out to a 30cm or 12 inch pizza base.
  14. Dust the dough lightly with flour if it becomes slightly stick while rolling.
  15. To make up the pizzas, top with your desired toppings and bake in a preheated oven at 250c or 482f for 15 to 20 minutes.
  16. And there it is... the pizza dough that behaves at home.

Whether you just want a change from regular pizza, or you're following Banting, or you want gluten free, this chicken pizza is for you. Super simple and super quick to make, this pizza truly is a full meal in one.
Ingredients
  • 2 Large chicken breasts
  • Diced green, red and yellow peppers
  • Chopped streaky bacon
  • Onion cut into quarter rounds
  • Feta cheese
  • Grated mozzarella cheese
Instructions
  1. Flip the chicken breasts over and cut away the fillets. Save these for another time.
  2. Working with one breast at a time, fold the breast in cling-wrap and start tapping it down with your meat mallet.
  3. This part does take a little patience as you don't want to bang a hole right through the breast.
  4. Keep tapping it down, work from the center out towards the edges.
  5. Stretch the plstic out flat periodically and pat the chicken with your hand to check on progress.
  6. Your goal is to get the breast down to a thickness of 3mm or ⅛th of an inch.
  7. Repeat this with the second breast.
  8. Start preheating your oven grill to maximum, and heat a large pan over medium high heat.
  9. Add a little butter to the pan and add one of the breasts smooth side down as soon as the butter starts to bubble.
  10. Season the top of the breast with the seasoning of your choice and fry this for about 3 minutes.
  11. You will see that the breast is almost cooked all the way through.
  12. Remove the breast from the pan and transfer it to a foil lined baking sheet.
  13. Continue with the secong breast.
  14. Top the breasts with the onion.
  15. Then come the diced peppers.
  16. Pile a large dose of mozzarella cheese on top of each breast.
  17. This is followed by a generous scattering of the streaky bacon.
  18. Crumble the feta cheese over the whole lot and you're ready to rock. There is no need to season with salt as the feta and bacon will add more than enough salt to the dish.
  19. Slide the baking sheet into the oven on the second to highest shelf and allow this grill until the feta has started to brown slightly. This should take about 10 to 12 minutes.
  20. Remove the pizzas from the oven and serve immediately.

What life or love be without a little sweet and a little savoury? This pizza gives you both in one. The strongly flavored Pancetta is offset by the sweetness of the preserved figs, and this all melted together with creamy Camembert and mozzarella.
Ingredients
For 2 Large (35cm) Pizzas
  • 1 Batch of Instant Pizza Dough
  • 400g Grated mozzarella cheese
  • 1 Round of Camembert cheese
  • 8 Slices of rolled pancetta
  • 2 Preserved figs
  • Salt & pepper to taste
Instructions
  1. For the toppings, cut a round of camembert into 8 wedges. Turn the on their side and cut them through the center giving you 16 pieces.
  2. Cut the preserved figs into slices, then cut 8 slices of pancetta.
  3. In addition, grate 400g of mozzarella cheese.
  4. Divide the pizza dough in 2. This is the instant pizza dough we featured a few weeks back and you can see this by clicking the onscreen link.
  5. Press each half into a large disc. Lightly flour the work surface and roll this out to 35cm in diameter, or 14 inches.
  6. Transfer the bases to baking sheets. Dock the bases using the tines of a fork to stop the dough from bubbling up during baking.
  7. Sprinkle a little less than half of the mozzarella onto each base. Arrange 8 wedges of the camembert on each each base, followed by 4 rounds of pancetta and the sliced preserved fig.
  8. Finish it off by sprinkling half of the remaining mozzarella over each one.
  9. Bake the pizza in a preheated oven at 250c or 480f for 15 to 20 minutes until the edges are crispy and golden.
  10. Remove the pizzas from the oven, slice into wedges and serve immediately.

With the Super Bowl just days away, here is a super-quick and super easy way to add some yummy to the occasion. I am using the Vietnamese Baguettes we baked in the previous episode, but you can use store bought as well.
Ingredients
For 16 Snacks
  • 3 Vietnamese baguettes cut into 16 angled slices
  • 1 Round Camembert cheese
  • Paprika to garnish
  • 16 Very thin slices of Pancetta
Instructions
  1. Cut the baguettes at an angle into long ovals. Take a round of Camembert cheese and cut it into 8 wedges. Cut each wedge through the center longitudinally, giving you 16 pieces in all.
  2. Place the wedges of cheese cheesy-side up on the ovals of baguette. Transfer these to a lightly greased baking sheet. The sheet must be greased as this inhibits and spill-over cheese from sticking to the sheet. In addition, you need 16 very thin slices of Pancetta.
  3. Heat the grill in your oven to maximum and melt the cheese over the baguette ovals. Remove theses from the oven and transfer them to serving platters.
  4. Sprinkle the tops with a little paprika. Fold each slice of pancetta into a zig-zag and stand a slice on top of each snack.
  5. Serve these snacks hot or cold and wait for the cheers and applause.

These super thin, crispy pizza bases are really easy to make. More like crispy matzah bread, this dough can be used to make mini and regular sized pizzas. There is no rising time, and the added bonus is that the dough can be rolled through a pasta roller.
Ingredients
  • 500g Self-raising flour
  • 250ml Milk
  • 2.5ml Salt
Instructions
  1. Place the self-raising flour, salt and milk in your food processor. Put the lid on and start mixing at maximum speed.
  2. Mix the dough for about 2 minutes, scrape the bowl down, and continue mixing for another 2 to 3 minutes. The dough will be crumbly, but will hold together well when compressed.
  3. Turn the dough out onto a lightly floured work surface and compress it into a ball. If you're not going to use the dough immediately wrap it in cling-wrap and store it in your refrigerator.
  4. Divide the dough into 4 pieces and proceed to roll each piece out to a thickness of 3 mm. This can be done by hand or machine.
  5. I am making mini pizzas for a wine tasting, but you can cut your bases to any size you require. Dock the bases.... this is fancy term for pricking holes in the dough. The docking prevents the bases from blowing up into large pillows while baking.
  6. Top the bases with toppings of your choice and bake them in a preheated oven at 250c or 480f for 10 to 12 minutes.
  7. Remove the pizzas from the oven and serve immediately.
  8. This recipe will make 4 regular bases, or up to 120 mini pizzetti.

Following yesterdays super stacker toasted sandwich, here's another super stacker, this time with all the flavor of real Italian pizza.
Ingredients
  • 4 Slices hickory ham
  • 8 Slices strong mini-Salami
  • 6 Calamata Olives, pitted and sliced
  • 24 x 1 inch Squares of mozzarella cut ⅛th inch thick (3mm)
  • 5ml Italian herb mix
  • 75ml Tomato sauce or tomato puree
  • 6 Slices square loaf bread
  • Butter
Instructions
  1. Chop the smoked hickory ham and strong aged salami, and pit the olives and cut them into rounds.
  2. Add the Italian herb mix and tomato sauce and mix this all together thoroughly.
  3. In addition cut 24 squares of mozzarella cheese to a thickness of around 3mm or ⅛th of an inch.
  4. Take 6 slices of square loaf bread and cut the centers from 2 of the slices.
  5. Butter the remaining 4 slices and place them in 2 pairs with the butter inwards.
  6. Working with on pair, arrange cheese around the edge of the bread. Top this with one of the hollow slices. While cooking the cheese will melt and glue the sandwich closed.
  7. Fill the hollow slice with half of the filling. Don't fill past the level of the crust.
  8. Arrange more cheese around the edges.
  9. Lift the filled half of the sandwich and place the underneath slice on top to close. Both outer surfaces will be buttered surfaces.
  10. Repeat this with the second sandwich.
  11. Heat your pan over a low flame. The pan must not be too hot as you want the cheese inside the sandwich to melt before the bread over-browns.
  12. Toast the sandwiches on the first side until you visibly see the underneath layer of cheese melting. Turn the sandwich over and repeat.
  13. To cut the sandwiches use the tip of your knife to get a clean cut, and avoid crushing the sandwich.
  14. Transfer the quarters to platters and serve immediately.
