The grilled bacon and blue cheese mushrooms are so good that it would be a crime to confine them to the breakfast menu! Giant brown mushrooms topped with cheese, onion and wood-smoked bacon - first baked - then topped again with blue cheese and more bacon before going under the grill to crisp. Ingredients
  • 6 Giant brown mushrooms (10cm - 13cm / 4in - 5in diameter)
  • 135g Grated 50/50 Cheddar Mozzarella mix
  • 1 Small onion finely chopped
  • 60g Strong blue cheese
  • 250g Wood smoked bacon, chopped
  • Salt and Pepper
Instructions
  1. Grease a roasting pan and arrange the mushrooms in the pan
  2. Divide the grated cheese and onion amongst the mushrooms
  3. Top the cheese and onion with half of the bacon
  4. Season liberally with salt and ground pepper
  5. Bake the mushrooms in a preheated oven at 180c / 350f for 15 minutes
  6. Remove the pan from the oven and reset the oven to grill
  7. Top the mushrooms with the blue cheese, and top the blue cheese with the other half of the bacon
  8. Grill the mushrooms for 5 minutes until the bacon has taken on color, and the blue cheese is melted
  9. Remove from the oven and serve immediately

Aromatic roasted peppers with roasted onion and whole garlic.
Ingredients
  • 2 Red peppers cut into to chunks
  • 2 Yellow peppers cut into chunks
  • 2 Green peppers cut into chunks
  • 1 Head of garlic, separated but with the skin on
  • 4 Medium onions, cut into eighths
  • Olive oil
  • Salt and pepper
Instructions
  1. Cut the peppers into chunky bits (see "How to Core a Pepper"
  2. Separate the head of garlic, and cut the onions
  3. Arrange all of these in a roasting pan. Drizzle liberally with olive oil and season with salt and pepper
  4. Roast in a preheated oven at 180c / 350f for 1 hour, until the peppers are tender and have taken on color and the garlic is mushy
  5. Remove from the oven and serve immediately

Tabbouleh, or Bulgar Salad is a classic Middle Eastern salad.
Ingredients
  • ¼ Cup bulgar wheat
  • 2 Cups firmly packed parsley, coarsely chopped
  • ½ Cup fresh mint, coarsely chopped
  • 400g Cocktail tomatoes
  • 1 Medium onion, finely chopped
  • 2 Spring onions, greens only, finely chopped
  • ¼ Cup olive oil
  • ¼ Cup fresh lemon juice
  • Salt to taste
Instructions
  1. Prepare the bulgar according to the package instructions
  2. Chop the parsley and mint coarsely
  3. Chop the onion and spring onion greens finely
  4. Cut the tomatoes into 8ths
  5. Drain any excess water form the bulgar wheat and add all of the other ingredients to the bowl
  6. Toss the salad to mix thoroughly, and to coat with the oil and lemon juice
  7. Allow the salad to mature for 1-2 hours in your refrigerator before serving

Hasselback potatoes are the creamiest potatoes you can possibly imagine. This quick and simple hasselback potato recipe will give you a winning dish every time.
Ingredients
  • ¼ Red pepper, chopped finely
  • ¼ Yellow pepper, chopped finely
  • 1 small pickled gherkin, chopped finely
  • 50g Butter
  • 1 Tsp Garlic powder
  • 12 Baby potatoes
Instructions
  1. Chop the peppers and gherkin finely, just a bit bigger than match-heads
  2. Weigh out the butter, and measure the garlic powder
  3. To slice the potatoes, hold your knife with the tip pointing downward towards the chopping board
  4. Slice into the potato until the tip of the knife meets the chopping board
  5. Draw the blade towards yourself, allowing the tip of the knife to "bounce" over the bottom of the potato, leaving it intact
  6. Make the slices 1-2mm apart, until the entire potato is sliced. Repeat with the remaining potatoes
  7. Heat your oil to 190c / 360f and deep-fry the potatoes for 20 minutes until the skin has visibly taken on a golden color, and the potatoes have started to fan out slightly
  8. Drain the potatoes on kitchen towel, place them in a bowl and keep them warm
  9. Melt the butter in a pot or pan over medium heat. Add the peppers and sauté for 3 minutes
  10. Add the gherkins to the pan and sauté for further 3 minutes
  11. Ad the garlic powder, stir it in until it dissolves into the butter. Remove from the heat and pour over the potatoes
  12. Serve immediately

  6. Mix this well, and allow to stand for 2-3 hours in the refrigerator before serving

Chopping a tomato is a simple yet necessary skill. This short video will have you chopping away in no time at all.

Instructions
  1. Place the tomato stem-side down on the chopping board
  2. Slice through the tomato with your blade at an angle to the chopping board
  3. when the tip of the blade hits the chopping board, pull the blade towards yourself allowing the tip of the blade to "bounce" over the stem of the tomato, leaving the bottom intact
  4. Rotate the tomato 90 degrees and repeat
  5. Rotate 45 degrees and repeat
  6. Rotate 90 degrees and repeat, this time slicing all the way through the tomato
  7. Turn the halves onto their flat sides and continue to the slice then into the desired thickness slices - thicker for coarsely chopped, and thinner for finely chopped.
